Farm history
Luis is a traditional coffee farmer who has been experimenting with specialty coffee for some time. On his family farm, which has been in operation for generations, they’ve been developing various fermentation processes to unlock the full potential of their coffee beans. This results in exceptionally clean and complex cups, showcasing not only the regional and varietal characteristics but also unique notes cultivated through fermentation.
Process
Harvested at peak ripeness, these coffee cherries undergo a meticulous fermentation process. First, they ferment in their whole fruit (cherry) for 24 hours. Next, the pulp is removed, and the beans are fermented again with a sticky layer called mucilage for an additional 64 hours. Finally, the beans are washed and laid out to dry in the sunshine.
