Process
- Selective Picking: We handpick only the ripest cherries for the highest quality.
- Floatation: We use a water bath to remove any unripe or defective beans.
- Manual Sorting: Our skilled team further sorts the beans for consistency.
- Dry Fermentation (90 hours): Beans are sealed in barrels to develop complex flavors.
- Sun-Drying (25 days): The beans are carefully dried on covered patios for optimal moisture content.
- GrainPro Storage: We use airtight GrainPro bags to preserve freshness until roasting.
