Farm history
Finca Las Flores is a family business, where the new production and experimental developments are in charge of the new generation of producers from the Vergara family, headed by Diego Vergara, a young producer passionate about developing new and fantastic profiles that differentiate his coffee to the of others.
The farm is located in Bruselas Huila, it has 20 productive hectares of coffee and has varietals such as Red Bourbon, Typica, Tabi, Maracaturra, Java, Pink Bourbon, Caturra Chiroso, Sidra Bourbon, Gesha and Colombia, currently, the farm has with 75,000 trees and an annual production of 85,000 kg.
The farm was acquired by Diego’s parents when they arrived from the department of Cundinamarca in 1990, and they obtained the family business. When Diego’s mother died, he and his brother decided to take over the farm and turn it into the company that it is today.
Different processes are carried out on the farm, such as natural, honey and washed, as well as different fermentation times, always seeking to improve the quality of their coffees, however they have standardized some processes for each variety and thus achieve producing very consistent and delicious coffees. every year.
Process
This coffee’s journey begins with a unique fermentation process. The cherries are picked and fermented whole for 62 hours in an oxygen-free environment (anaerobic fermentation). Then, the pulp is removed, and the beans undergo a second fermentation for 48 hours in tanks with exposure to air (aerobic fermentation). This step helps remove any remaining fruit residue (musilage) and defective beans through a washing process. Finally, the coffee beans are laid out to dry in the sunshine on canopies or patios for 10 to 15 days.
